How to Store Potatoes

Since potatoes are on sale right now, (The best deal is 10lbs of Russets for $.98 at Safeway) I started wondering how to store potatoes. I remember reading novels where potatoes were stored all winter. I found out that potatoes can be stored 3-4 months under the proper conditions. They need to be stored in paper bags with holes and kept in in a cool dark area between 40-50 degrees. The refridgerator is not a good place since the potatoes can turn to sugar and turn brown. A root cellar is the best, but since their are not many root cellars in the NW any where in your home that is cool and dry will work. Is important to keep them out of light because they can turn green and become toxic.
